Ditch the non-stick and get cast iron. There’s a learning curve but it’s worth it since you’re using a gas range. The nice thing about gas and cast iron is that it doesn’t matter if the pan is totally flat.
Lodge is good for the price. I prefer my vintage Wagner cast iron pans to the newer stuff. I do have one Butter Pat that I love for smaller dishes.
